Flourless Carob Cake

You can check out this recipe in Nourishing Traditions.  I had great expectations for it.  Kristy told me it was good.  Here are the ingredients.

3/4 C carob powder

1/2 C plus 1 T butter

3 T water

1 T vanilla

5 egg yolks

1/2 C rapadura (turbinado)

5 egg whites

pinch of sea salt

1 C carob sauce (optional)

 

I’m not going to bore you with the details because this cake did not turn out to be a tasty, moisty, wonderful confection.  I’ll give you the highlights.

On thing you do not want to do is dip the mixer’s chord in the bowl of egg whites.  It will not effect the finished product (at lest I don’t think it will.  Is this where I went all wrong?) but it is kinda slimey and gooey.

 

This is a nice recipe to make when you are wearing a baby.  That’s Jodi, by the way.  She is the only baby at the moment that I allow to invade my personal space in such a profound and meaningful way.  Because I know someone will ask my wrap is from Jen Backus.

 

This is what the cakes looked like after being cooked.  Don’t they look tasty.  They smelled wonderful too.  Ignore that hole in the middle.  It was done and that’s all you need to know.

 

There was something called “Carob Sauce” that was recommended to slather over the tops of the cakes.  Wait, it was recommended that we de-pan the cakes and stack them on top of each other.  You can see my failed de-panning in the cake to the top of the picture.  That’s all you need to know about that.  Look at the bottom cake.  See the carob sauce?  It completely ruined what might have been an edible dessert.

At least it photographs well.  Any other recommendations for the cook along?  Did I ever post the ketchup cook along?

    I thought turbinado sugar and rapadura are different. From what I’ve read online anyway. Am I wrong?

    it looks like it needs some cream cheese frosting, which makes everything taste good, in my humble and unhealthy opinion. ;)

    That is too funny. NT is an acquired thing I believe… I have tried a few of the desserts in there and yes, Less than thrilling was the perfect term! :) I would love to try one that we LOVE so it would help me feel better about things. OH, we do really like the tapioca pudding! That was pretty yummy! And I really like tapioca so that says a lot! :)

    Did you beat your egg whites with salt until stiff? I would suggest not using a mixer. This is not a great recipe to just throw everything together and go… it needs love.

    Now, you’re gonna make me redo it, huh? Just to show what it was supposed to look like. I can think of worse things than having to eat this cake. ;)

    I make a pan release that is equal parts oil, shortening (organic, non hydro), and flour. That does not help you in the no wheat department though. Sorry.

    Thank you for the book recommendation in your comment on my blog.
    (I put a copy on reserve from our library tonight!)

    I can’t think of anything new/unusual that my Katie has eaten lately, or anything that she has had a lot of…other than maybe yogurt? She eats a LOT of yogurt! But over all she is a pretty healthy eater.
    (Actually out of all my kids she is the best eater (eats the most veggies, etc.)
    Still I’m interested in what that book has to say!

    I have another question for you….am I correct in thinking that you do not vaccinate?
    Up until this point we have fully vaxed my kids, but now Katie is due for her 5 year shots ( actually she is past die) and something in my mind just says…don’t do it! If it were one of the other kids I probably would have this hesitation, but with her neurologically fragile state… I am really scared to add any more ‘toxins’ to her little body.
